As with most produce, there’s no expiration date on an artichoke when you buy it. So, you might wonder, how long do artichokes last in the fridge? When I bring fresh artichokes home from the store, I can make them last for three weeks in my fridge.

I have found the best way to store them is as a whole artichoke. I remove the outer leaves, trim the calloused end, and make a fresh cut. Then I place the fresh artichokes stem down in a glass jar of cold filtered water. If there are any loose leaves on the stem, I remove those too. The water should be filtered water for the best quality.

Keeping the jar in the fridge provides the artichoke with the right conditions to stay fresh. As needed, I add a little more water, and after about a week, I do a complete water change. The open jar allows the artichoke to get air and last for weeks. I feel this method of storage is the best way, better than using plastic wrap or any plastic container.

Each week, I trim off about 1/4 inch of the artichoke stem to keep the vascular system open, allowing the stem to continue to take in water and last longer. I store one per jar whether they are small or large artichokes. Having them in the jars and in the line of sight when I open the fridge is an easy way to make sure they get eaten and don’t go to waste.

The Best Way to Cook a Whole Artichoke

There are many different ways to cook a whole artichoke but I like cooking them in the Instant Pot. I have found that this is one of the quickest and easiest ways to enjoy them.

Here Are the Steps I Follow to Cook Artichokes in the Instant Pot:

  1. Dry any water off of the whole artichoke with a paper towel
  2. Cut off the top, inedible part, of the raw artichoke
  3. Use kitchen shears to cut the artichoke’s leaf tips
  4. Use a knife to make one more cut on the artichoke stem so that it is a fresh cut
  5. Cut a lemon in half and rub a small amount of lemon juice where you cut the artichoke (stem and top)
  6. Add 2 cups of water to the bottom of your Instant Pot
  7. Place the wire rack in the bottom of the Instant Pot
  8. Place artichoke(s) on the wire rack in the Instant Pot and squeeze in the remaining lemon juice
  9. Add cover to the Instant Pot and turn the venting knob to the “Sealing” position
  10. Cook for 12 minutes

After cooking, you can eat them with melted butter and garlic or any other seasoning you enjoy. It is also delicious with garlic aioli. There are a variety of ways to enjoy their great flavor.
