Peach Blueberry Crisp Recipe

I’ve had a sweet tooth lately and have been craving a good dessert like fruit crisp. I love fruit desserts. What I love about this recipe is the variety of ways you can make it. Today I will share with you my Peach Blueberry Crisp recipe, but I will also show you how to make it with a variety of other fruits.

I like to purchase produce during the peak season. When shopping, I use reusable produce bags, like these, whenever I can. We eat the produce fresh, but I will also freeze or can some for later. This is another trick to save money on your food budget because you are usually getting items at their lowest price. There also comes a time when I have to eat out of the pantry or freezer to make room for the next season of fruits and vegetables.

For my Peach Blueberry Crisp recipe, you can use fresh, canned, or frozen fruit. Do you have a favorite fruit you enjoy in a dessert? This recipe also works great with berries, apples, and pears, too. I used some canned peaches and fresh blueberries I picked that day. Again, see what you have and make it with that. Growing Your Own Fruit

Are you growing any fruit? I have three blueberry bushes. When I purchased the bushes, I made sure to get an early, mid, and late season variety. I pick and clean them, which allows me to have fresh berries all season long. I also like to freeze fruit and will use my food saver to prepare the fruit for the freezer.

Monk Fruit Sugar Replacement

Since I am diabetic, I use monk fruit as a sugar replacement and use it for pretty much everything. When shopping for monk fruit products, I noticed the brown sugar version is quite pricey. So, I make my own. I take about ½ cup of monk fruit and about 1 Tablespoon of molasses and mix them together in a Magic Bullet blender. Of course, this is just an option if you are interested in making your own. Otherwise, feel free to use regular brown sugar or another brown sugar substitute of your choice in this recipe.

Crumble vs. Crisp

Oats are also used in this recipe. In fact, oats are what makes this a crisp! During the filming of this recipe, I think I called this a crumble and a crisp. The difference is the inclusion of oats. Without oats it is a crumble, with oats it is a crisp! I keep oats in my pantry at all times and make sure I rotate my food stock. This recipe is a great way to use items from your pantry. I order my oats from Amazon in a large bag. I enjoy flexible recipes where I can use items I have on hand and avoid a trip to the grocery store. It is just one more reason to have a well-stocked pantry at home.

This recipe comes together super easy. It is also a great way to use fruit when you don’t want to make pie! The filling is mixed in the baking dish, saving you an extra bowl to wash. Once you have your ingredients gathered, it takes just a few minutes to measure, mix, and pour. Place it in the over and wait for it to bake!

There’s no wrong way to put this crisp together. Picking your favorite fruits and adding a tasty topping just makes it that much better! It's also a great way to use up any fresh or frozen fruit you have on hand.

For the Filling:

  • 2 Qts. Peaches, fresh, frozen, or canned. Drained.
  • 2 c. Blueberries
  • 3 T. Flour (I used Bob's Red Mill 1-1 Gluten Free Baking Flour)
  • ½ T. Vanilla
  • ¼ tsp. Nutmeg
  • ¼ tsp. Cinnamon

For the Topping:

For the Filling:

  • Preheat Oven to 375° F
    Place the drained peaches and blueberries in a 9" x 13" baking dish.
  • Sprinkle flour, cinnamon, nutmeg, and vanilla over fruit and gently mix together.
    (If you are using individual ramekins, place all ingredients in a large bowl. Mix together and divide evenly between the ramekins.)

For the Topping:

  • In a mixing bowl, add the flour, brown sugar, rolled oats, cinnamon, and nutmeg. Gently mix.
  • Cut cold butter into smaller chunks and place in the mixing bowl.
  • Blend in the butter with a pastry blender or a fork. The topping will be crumbly.
  • Layer topping evenly over fruit mixture.

Baking:

  • Place in a preheated oven.
    Tip: Place the baking dish on a cookie sheet to catch anything that bubbles over.
    Bake until golden brown, about 35-40 minutes.
  • Serve with whipped cream or ice cream.
