One of the biggest ways we keep our grocery budget at $135 per person per month is by focusing on recipes like this homemade spinach dip that use flexible, multi-purpose ingredients. When you have to buy specific ingredients that you only use in one recipe, youāll spend more money and it's more likely that the item will go bad.
This dip is also a great way to use up items before they go bad. Before I go grocery shopping if I see that I have extra dairy products or spinach in my fridge, this is a way to use them that feels more like a treat!
When you build meals around ingredients you already have, you naturally waste less.
A Trick for Keeping Dairy Items Fresh
I grocery shop once a month and buy cottage cheese and greek yogurt on almost every shopping trip. They can usually be swapped out for one another in recipes but also can be used in place of sour cream in some dishes. Since they have a higher protein content they also add nutrition to recipes like baked goods and I try to incorporate them into meals whenever possible.
If you store these dairy items in glass containers, they will last longer than their best buy date. Oftentimes I can keep them fresh for about two months at a time. If I am starting to run low on one, I can always use the other in a recipe. This helps me be able to stretch out my ingredients until itās time for grocery shopping again.Ā

How to Keep Spinach Fresh
Since this is a spinach dip recipe, the spinach matters. I use frozen spinach, but not store-bought frozen blocks. Instead, I freeze fresh spinach myself. This keeps the leaves in larger pieces which give a better texture for dips like this.
When I bring spinach home from the store I wash it in a vinegar wash for two minutes. After washing, I let it dry completely. It should be stored in a silicone bag or glass container in the fridge. If I want to freeze it, I will use a silicone bag and put it in the freezer. I do this often for smoothies, my zuppa toscana, and recipes like this dip.Ā

High Protein Spinach Dip
Ingredients
- 1 T oil
- ¼ cup onion, diced
- 2 cups dairy (cottage cheese, greek yogurt, or cream cheese)
- 1 cup shredded cheese
- 3-4 cups spinach
- 1 T garlic powder
- salt & pepper, to taste
Instructions
- Brown onions in a pan with oil
- Blend cottage cheese (skip this step if you aren't using cottage cheese)
- Chop spinach
- Add spinach to pan and cook down
- Add dairy products, shredded cheese, and seasonings to pan and mix well
- Cook for 10 minutes and serve
