Fluffy High-Protein Ham & Cheese Biscuits
Ingredients
- 1 cup cottage cheese
- 2 eggs
- 1 ¼ cups all purpose flour
- 1 T baking powder
- ½ teaspoon salt
- 2 T melted butter or olive oil
- 1 cup diced ham
- ¾ cup shredded cheese
Instructions
- Preheat oven to 400°F
- Line baking sheet with parchment paper
- Mix together cottage cheese, eggs, and melted butter or oil
- Add dry ingredients: flour, baking powder, and salt
- Mix until combined, don't overmix - this will keep them fluffy
- Gently fold in ham and cheese (or other toppings as desired)
- Scoop into 8 large biscuits and place on baking sheet
- Lightly shape the tops
- Bake 16-20 minutes until golden and fluffy
- Brush tops with melted butter
