Fluffy High-Protein Ham & Cheese Biscuits

These breakfast biscuits are packed with protein and can be customized for the flavors and preferences of your family members.

Ingredients
  

  • 1 cup cottage cheese
  • 2 eggs
  • 1 ¼ cups all purpose flour
  • 1 T baking powder
  • ½ teaspoon salt
  • 2 T melted butter or olive oil
  • 1 cup diced ham
  • ¾ cup shredded cheese

Instructions
 

  • Preheat oven to 400°F
  • Line baking sheet with parchment paper
  • Mix together cottage cheese, eggs, and melted butter or oil
  • Add dry ingredients: flour, baking powder, and salt
  • Mix until combined, don't overmix - this will keep them fluffy
  • Gently fold in ham and cheese (or other toppings as desired)
  • Scoop into 8 large biscuits and place on baking sheet
  • Lightly shape the tops
  • Bake 16-20 minutes until golden and fluffy
  • Brush tops with melted butter
