Fluffy High-Protein Ham & Cheese Biscuits

These breakfast biscuits are packed with protein and can be customized for the flavors and preferences of your family members.

- 1 cup cottage cheese
- 2 eggs
- 1 ¼ cups all purpose flour
- 1 T baking powder
- ½ teaspoon salt
- 2 T melted butter or olive oil
- 1 cup diced ham
- ¾ cup shredded cheese
Preheat oven to 400°F
Line baking sheet with parchment paper
Mix together cottage cheese, eggs, and melted butter or oil
Add dry ingredients: flour, baking powder, and salt
Mix until combined, don't overmix - this will keep them fluffy
Gently fold in ham and cheese (or other toppings as desired)
Scoop into 8 large biscuits and place on baking sheet
Lightly shape the tops
Bake 16-20 minutes until golden and fluffy
Brush tops with melted butter
