As an allergy family, there are many times that we chose to make things from scratch in order to control the ingredients. This allows us to know that they are safe for our family. In this case, we have a soy allergy in our family so I make an allergy friendly teriyaki sauce. This easy to make recipe can be found here. In this recipe I also use this Soy Free Hoisin Sauce.

Hidden Veggies
I add vegetables to almost all of my meals that I make with ground meat. Whether it's taco meat, Shepherd's pie, or these lettuce wraps. By adding onions, peeled zucchini, onions, or riced cauliflower it not only adds to the nutrition content of the meal, but it also stretches the meat servings. Since meat is usually the most expensive part of the recipe, this helps with saving money on groceries.

Lettuce Wraps
Ingredients
Filling
- 1 onion, chopped
- 1 zucchini, chopped
- 2 carrots, chopped
- 2 lbs ground chicken
- 1 T fresh ginger, shredded
- 1 can water chestnuts
Sauce
- ½ cup coconut aminos
- 3 T hoisen sauce
- 1 T rice vinegar
- 1 T sesame oil
- 1 teaspoon honey
For Serving
- Romaine Lettuce Leaves
Instructions
Filling
- Cook vegetables in oil until tender
- Add meat and cook until brown
- Shred fresh ginger into the meat mixture
- Add sauce and water chestnuts into the meat
- Cook for 1-2 minutes
- Spoon mixture into lettuce and serve with rice
Sauce
- Mix all ingredients in a glass jar
- Stir well
