Lettuce Wraps

These lettuce wraps are a packed with veggies and flavor. This recipe is great for meal prep since you can put some portions in the freezer to enjoy for meals later.

Filling 1 onion, chopped 1 zucchini, chopped 2 carrots, chopped 2 lbs ground chicken 1 T fresh ginger, shredded 1 can water chestnuts Sauce ½ cup coconut aminos 3 T hoisen sauce 1 T rice vinegar 1 T sesame oil 1 teaspoon honey
Filling Cook vegetables in oil until tender
Add meat and cook until brown
Shred fresh ginger into the meat mixture
Add sauce and water chestnuts into the meat
Cook for 1-2 minutes
Spoon mixture into lettuce and serve with rice
