Lettuce Wraps

These lettuce wraps are a packed with veggies and flavor. This recipe is great for meal prep since you can put some portions in the freezer to enjoy for meals later.

Ingredients
  

Filling

  • 1 onion, chopped
  • 1 zucchini, chopped
  • 2 carrots, chopped
  • 2 lbs ground chicken
  • 1 T fresh ginger, shredded
  • 1 can water chestnuts

Sauce

  • ½ cup coconut aminos
  • 3 T hoisen sauce
  • 1 T rice vinegar
  • 1 T sesame oil
  • 1 teaspoon honey

For Serving

  • Romaine Lettuce Leaves

Instructions
 

Filling

  • Cook vegetables in oil until tender
  • Add meat and cook until brown
  • Shred fresh ginger into the meat mixture
  • Add sauce and water chestnuts into the meat
  • Cook for 1-2 minutes
  • Spoon mixture into lettuce and serve with rice

Sauce

  • Mix all ingredients in a glass jar
  • Stir well
