Strawberry shortcake is a classic, summer dessert. This recipes takes that summertime favorite and gives it a high-protein twist! I used cottage cheese and strawberries to create a delicious whip that is naturally high in protein and has a tangy, sweet flavor. It's easy to make and use on top of your shortcake or as a healthy dip. I put it on top of protein packed biscuits and added additional strawberries. It's a dessert that is not only delicious, but also nutritious!

The biscuits in this recipe were homemade with simple ingredients like flour, protein powder, and baking soda. Using greek yogurt in baked goods like biscuits and muffins adds extra moisture and increases the protein content.
Strawberry Shortcake Protein Biscuit Ingredients
- 1 cup flour
- ½ cup plain Greek yogurt (adds protein and moisture)
- 1 scoop unflavored or vanilla protein powder (whey or plant-based)
- 1½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoon cold butter or coconut oil
- 2–3 tablespoon milk (as needed for dough)
Instructions
- Mix dry ingredients.
- Cut in butter until crumbly.
- Stir in Greek yogurt and milk until it forms a dough.
- Shape the dough with your hands into biscuits
- Bake at 400°F for 12–14 minutes.

How to Keep Strawberries Fresh
This strawberry shortcake recipe includes fresh strawberries for the whip as well as for a topping. My strawberries in a jar hack went viral a few years ago and since then, millions of people have learned how to keep their strawberries fresh for weeks!
To wash strawberries, use a large bowl with ¼ cup white distilled white vinegar (5% acidity) and 10 cups of cool water. Set a timer and let the berries soak for 2 minutes.
After the two minutes are up, rinse the strawberries off in a colander, like this one, then lay them in a single layer on a clean towel to dry. Once they are completely dry, place the berries in a glass jar with a paper towel at the bottom and store it in the refrigerator.
Strawberry Shortcake Whipped Topping
This whipped topping will be layered on the high protein biscuits to make this delicious strawberry shortcake recipe.
Ingredients
- 1 cup full-fat cottage cheese (for best creaminess)
- ½ cup fresh or thawed frozen strawberries (adjust to taste and color)
- 1–2 teaspoon maple syrup or honey (or to taste)
- ½ teaspoon pure vanilla extract
- Pinch of salt (optional, enhances flavor)
Instructions
- Add all ingredients to a high-speed blender or food processor.
- Blend for 30–60 seconds until completely smooth and creamy.
- Taste and adjust sweetness or vanilla if desired.
- Chill in the fridge for 15–30 minutes before serving to allow the whip to thicken slightly and flavors to develop
Putting the Dessert Together
Once your biscuits and whipped topping are made, it's time to assemble the dessert. I cut the biscuits in half and put a large scoop of the whipped topping on the biscuit and then added freshly sliced strawberries on top of it. I added the top of the biscuit and then was ready to enjoy my dessert!
You could also sprinkle chopped nuts or high-protein granola on top for crunch and texture. if you have extra strawberry whipped topping left, store it in a glass jar with a metal lid and it should stay fresh in the fridge for a couple of days.
