Stretch Your Meat with Hidden Veggies
One of the easiest ways to make your Shepherd’s Pie go further is by adding vegetables. It is not only for extra nutrition but to stretch your meat into more servings which saves money.
When you finely chop or grate veggies like carrots or zucchini, they blend right into the filling. Cauliflower rice is another option to bulk up your meat. You’ll still get that rich, savory flavor while adding fiber, vitamins, and extra texture. It’s a good trick for picky eaters too, they’ll never know what’s hidden inside, For years Mike didn’t know that I was adding vegetables to meals. It wasn’t until I started filming YouTube videos with recipes that he figured it out!

I wouldn’t do it for this particular recipe, but for other meat recipes (like taco meat) you can also toss in lentils or beans. With grocery prices climbing, every small stretch adds up over time.

Freezing Mashed Potatoes

You will want to let the potatoes cool completely before you move them into the freezer. It is best to freeze them in meal sized portions. I like using Souper Cubes but you can also use smaller glass containers. Make sure to label them with a sharpie, this is easy to remove from glass later.
When you’re ready to use the frozen mashed potatoes, thaw overnight in the fridge or reheat gently on the stove with a splash of milk or butter. They’ll be creamy and just as good as the day you made them.
Many people like to try batch cooking or making freezer meals all on one day. I’ve found that by just cooking extra when I’m making the meal, it’s a lot easier. Whenever I make this meal, I will make extra mashed potatoes at that time to fill my freezer. I can grab them any evening to add to a protein for an easy dinner. A little planning ahead saves you time and energy on busy evenings.

Batch Cooking for Busy Nights
Along with cooking extra mashed potations, you can also make extras of the entire dish. You can make a whole second pie in a glass container that will go in the freezer instead of into the oven to be baked. Depending on your family size you can use a baking dish that already comes with a lid for freezer storage or the largest one from a mixed size set. The lids are not oven safe (most are plastic) so be sure to remove those before freezing.
When you’re ready to enjoy it, thaw in the fridge overnight and bake until heated through or bake straight from frozen if you’re in a hurry (just add 15–20 extra minutes).
