It can be tiring to think of meal ideas every day. This creamy lemon bean dish is one that your family might enjoy and you can add to your rotation! It's easy to make and only takes on pan. It has hidden vegetables for extra nutrition and is also a meatless meal which is helpful for sticking to your grocery budget!

Sides and Serving Ideas
If you are trying to spend less on groceries, this meal is perfect for that. The ingredients are relatively inexpensive and it is a complete meal on it's own. If you wanted to stretch this meal even further, you could also serve it over rice or pasta. I served ours with fresh bread but you could also serve it with a side of fresh veggies. Lastly, while we enjoy that this meal is meatless, you could use it as a base and add sausage or grilled chicken to it. I love how versatile it is and you can customize it to meet the needs of your family.

Creamy Lemon Bean Dish
Ingredients
- 4 T butter
- ½ onion, chopped
- 1 zucchini, peeled & chopped
- 4 cloves garlic
- ¼ cup flour
- 2 cups chicken stock
- ½ lemon
- ½ teaspoon ground mustard
- 2 cans beans (cannelloni, garbanzo or any other white bean)
- 2 cups spinach, chopped
- 1 cup whole milk or cream
- ½ cup parmesan cheese, shredded
- ¼ cup parsley, chopped (optional)
- 1 T lemon zest (optional)
Instructions
- Brown onions and zucchini in a large pan with 1 T butter
- Once onions are brown, add garlic and saute
- Add 3 T butter and ¼ cup flour to start the roux
- Add chicken broth, lemon, salt, paper, and mustard
- Rinse beans and add them to the pan
- Simmer for 5 minutes as sauce thickens
- Add spinach
- Add milk or cream and cook together for 5 minutes.
- Top with parmesan cheese, parsley, and lemon zest
- Serve and enjoy!
