Creamy Lemon Bean Dish

Ingredients
  

  • 4 T butter
  • ½ onion, chopped
  • 1 zucchini, peeled & chopped
  • 4 cloves garlic
  • ¼ cup flour
  • 2 cups chicken stock
  • ½ lemon
  • ½ teaspoon ground mustard
  • 2 cans beans (cannelloni, garbanzo or any other white bean)
  • 2 cups spinach, chopped
  • 1 cup whole milk or cream
  • ½ cup parmesan cheese, shredded
  • ¼ cup parsley, chopped (optional)
  • 1 T lemon zest (optional)

Instructions
 

  • Brown onions and zucchini in a large pan with 1 T butter
  • Once onions are brown, add garlic and saute
  • Add 3 T butter and ¼ cup flour to start the roux
  • Add chicken broth, lemon, salt, paper, and mustard
  • Rinse beans and add them to the pan
  • Simmer for 5 minutes as sauce thickens
  • Add spinach
  • Add milk or cream and cook together for 5 minutes.
  • Top with parmesan cheese, parsley, and lemon zest
  • Serve and enjoy!
