Cottage Cheese adds about 12ā14 grams protein for a half cup and greek yogurt adds 10-12 grams. The 6 eggs add a total of 36 grams of protein. This makes the entire recipe have 58-62 more grams of protein than when traditional mayo is used which has less than 1 gram of protein. This recipe makes about 8 servings which each have about 8 grams of protein. That makes this a much more filling and satisfying side dish!

High Protein Potato Salad
Ingredients
- 2.5 lbs potatoes cooked and chilled overnight
- 6 hard boiled eggs
- ½ cup cottage cheese
- ½ cup plain Greek yogurt
- 2 T Sweet relish
- 1 T Mustard
- 2 teaspoon Vinegar
- ½ cup Onion, diced
- Salt & pepper, to taste
- Paprika, optional
Instructions
- Wash and cut potatoes into bite-sized pieces.
- Boil in salted water until fork tender.
- Drain and cool completely, then refrigerate overnight for best texture and added resistant starch benefits.
- Boil eggs and place in ice water
- Peel the eggs and separate the yolks from the whites.
- Chop the egg whites and set aside.
- In a large bowl, mash the egg yolks.
- Stir in the cottage cheese, Greek yogurt, relish, mustard, vinegar, onion, salt, and pepper until creamy.
- Add the chilled potatoes and chopped egg whites to the bowl.
- Gently fold everything together until evenly coated.
- Sprinkle paprika over the top before serving.
- Chill at least 30 minutes before serving for the best flavor.
