Artichokes are in season from March - May. That is when you will be able to find them at peak freshness and also the lowest prices. Choosing seasonal produce is a great way to save money on groceries.
You might not buy artichokes because you aren't sure how to cook them, but I have a foolproof way to cook them at the bottom of this blog and it's easier than you might think!

How to Store an Artichoke
I have found the best way to store them is as a whole artichoke. I remove the outer leaves, trim the calloused end, and make a fresh cut on the stem. Then I place the fresh artichokes stem down in a glass jar of cold filtered water. I use my Boroux water filtration system to ensure we always have fresh, filtered water in our home.
The jar with the artichoke should be kept in the refrigerator. Every week I will trim the end of the stem and put in fresh water if I still haven't used it. The open jar allows the artichoke to get air and last for about three weeks. I do not cover the artichoke with any plastic.
I store one per jar whether they are small or large artichokes. Having them in the jars and in the line of sight when I open the fridge is an easy way to make sure they get eaten and don’t go to waste.

How to Cook Artichokes in the Instant Pot:
- Dry any water off of the whole artichoke with a paper towel
- Cut off the top, inedible part, of the raw artichoke
- Use kitchen shears to cut the artichoke’s leaf tips
- Use a knife to make one more cut on the artichoke stem so that it is a fresh cut
- Cut a lemon in half and rub a small amount of lemon juice where you cut the artichoke (stem and top)
- Add 2 cups of water to the bottom of your Instant Pot
- Place the wire rack in the bottom of the Instant Pot
- Place artichoke(s) on the wire rack in the Instant Pot and squeeze in the remaining lemon juice
- Add cover to the Instant Pot and turn the venting knob to the “Sealing” position
- Cook for 12 minutes
After cooking, you can eat them with melted butter and garlic or any other seasoning you enjoy. It is also delicious with garlic aioli. There are a variety of ways to enjoy their great flavor.
