Coat the chicken with BBQ powder
Sear chicken in pan with 1 T oil for 2 minutes per side
Remove from pan and set aside
Warm 1 T olive oil and add sliced onions and baking powder
Stir occasionally for about 8–10 minutes until deep golden brown
Stir in the canned tomatoes (with liquid).
Add spinach to the skillet and cook 2-3 minutes
Lower heat and stir in Greek yogurt
Season with chipotle powder (or smoked paprika), salt, pepper, and garlic to taste.
Cover with shredded cheese and a lid. Let cook for 8–10 minutes on low heat until chicken reaches 165°F and cheese is melted.
Serve with beans
