Smokey BBQ Chicken

Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 4 teaspoon BBQ seasoning
  • 2 T olive oil
  • 1 onion, sliced
  • 1 teaspoon baking powder
  • ½ can diced tomatoes
  • 1 teaspoon chipotle powder
  • salt, pepper, garlic powder to taste
  • 2 cups spinach, chopped
  • 1 cup cheddar cheese, shredded
  • 1 can black beans

Instructions
 

  • Coat the chicken with BBQ powder
  • Sear chicken in pan with 1 T oil for 2 minutes per side
  • Remove from pan and set aside
  • Warm 1 T olive oil and add sliced onions and baking powder
  • Stir occasionally for about 8–10 minutes until deep golden brown
  • Stir in the canned tomatoes (with liquid).
  • Add spinach to the skillet and cook 2-3 minutes
  • Lower heat and stir in Greek yogurt
  • Season with chipotle powder (or smoked paprika), salt, pepper, and garlic to taste.
  • Cover with shredded cheese and a lid. Let cook for 8–10 minutes on low heat until chicken reaches 165°F and cheese is melted.
  • Serve with beans
