Farro Grain Bowls

Ingredients
  

  • 1 cup farro
  • 3 cups chicken broth
  • 1 butternut squash cubed
  • 1 can chickpeas
  • ¼ cup shallots
  • 2 cups kale
  • avocado oil
  • salt
  • pepper
  • garlic powder

Dressing

  • 1 clove minced garlic
  • ½ teaspoon dijon mustard
  • ½ cup fresh herbs (parsley, mint, thyme, basil)
  • 1 T avocado oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • juice of one lemon

Instructions
 

  • In a large pan, add 1 cup of farro and 3 cups of broth
  • Simmer for 30-40 minutes
  • While farro is cooking, cube butternut squash
  • Place on a baking pan with avocado oil, salt, and pepper
  • Bake for 15 minutes at 375 degrees
  • Toss kale in avocado oil, garlic, salt, and pepper
  • Add shallots, chickpeas, and kale to baking pan
  • Return to oven and bake for an additional 10 minutes until everything is tender
  • Mix all dressing ingredients in a bowl
  • In your bowl place farro, vegetables, and top with dressing
