Coconut Shrimp

Ingredients
  

Batter

  • 1 lb shrimp
  • 1 cup flour
  • 1 cup beer
  • 1 egg
  • 1 teaspoon salt

Coating

  • 1 cup shredded coconut
  • 1 cup panko bread crumbs

Sauce

  • ¼ cup honey
  • ¼ cup orange marmalate
  • ¼ cup dijon mustard
  • Splash tobasco optional

Instructions
 

  • Make sure that the shrimp are cleaned and deveined. For best results, make sure that if you are using frozen shrimp that they are fully thawed
  • In a large bowl, combine the flour and beer. Mix to combine
  • Add in the egg and salt, mix well
  • On a large plate mix together coconut and panko crumbs
  • Place shrimp in batter, once covered, place in the coconut mixture until shrimp is coated
  • Put coated shrimp on a clean plate
  • Repeat the process for all of your shrimp
  • Spray olive oil on shrimp to help it become golden brown once cooking
  • Add shrimp in a single layer to the air fryer (or in air fryer basket)
  • Set the air fryer to 360 degrees f
  • Set the cooking time to 10-12 minutes. *time and temperature will vary depending on your air fryer
  • Combine sauce ingredients in a small bowl, mix well
  • Remove shrimp from air fryer and serve
