The ingredients in this recipe can be customized based on what is best for your family. If you need these to be gluten free, a great option is to use oat flour. You can grind oatmeal in a blender or magic bullet and this works perfectly! When I do this, I shake the magic bullet a little bit to ensure that everything is well mixed and I am able to use that flour in this recipe.

If you are a gardener, or have friends who garden, there is always a season when zucchini is plentiful and everyone is looking for ways to use them. While you can keep zucchini fresh for several months, it is fun to have different recipes to use it for, including these brownies!
I peeled the zucchini before I shredded it for this recipe. This removes the green color that might give away the fact that there are veggies hidden in this recipe. You can shred the zucchini with a standard cheese shredder. After shredding, be sure to remove any excess moisture with a paper towel or cheesecloth.

Alternative Healthy Ingredients
I used a pear sauce (similar to applesauce) as a natural sweetener in this recipe. You can use one that is homemade or store bought, this is my homemade applesauce recipe.
If you want to make these brownies egg free, you could use alternatives such as bananas, chia seeds, flax seeds, or the liquid from a can of garbanzo beans.
Greek yogurt adds extra protein to these brownies. This can be stored in a glass jar in the fridge. When you store it this way, it will last about two weeks longer than it will in the plastic container. It also allows you to see how much you have left so that none goes to waste. Hidden Veggie Brownies
Ingredients
- 1 cup grated zucchini (squeeze out excess moisture)
- ½ cup unsweetened applesauce
- ¼ cup greek yogurt
- 1 egg large
- 1 teaspoon vanilla extract
- ¼ cup honey or maple syrup
- ¾ cup oat flour
- ¼ cup cocoa powder
- 1 scoop unflavored collagen peptides
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon optional
- ¼ cup chocolate chips or chopped nuts optional
Instructions
- Preheat oven to 350°F
- Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- Grate zucchini and squeeze out excess moisture using a clean towel.
- In a large bowl, whisk together applesauce, Greek yogurt, egg, vanilla, and honey. Stir in the grated zucchini.
- In a separate bowl, whisk together oat flour, cocoa powder, collagen peptides, baking soda, salt, and cinnamon.
- Gradually fold dry ingredients into the wet mixture until just combined. Stir in chocolate chips or nuts if using.
- Pour the batter evenly into the prepared pan
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let brownies cool completely before slicing for best texture.
