Water Bath Vs. Pressure Canning
There are two main types of canning, Water Bath Canning and Pressure Canning. If you are just getting started with canning, you might want to try water bath canning. Fruits can safely be canned using this method and provide a great starting point for beginners. This is generally an easier type of canning and you also need less canning supplies. You can get started with just a large stock pot with a trivet in the bottom. One item on my list of canning supplies that I would recommend getting to start is a jar lifter. It makes canning so much easier!
Safety Guidelines for Home Canning
It is incredibly important to follow safe canning guidelines from National Center of Home Food Preservation (NCHFP) and Ball canning recipes. Another place to find local resources is your local canning extension office which is normally run through a local college. You can google, "local canning extension" and it will show you what is in your area. Local grange halls often have canning classes if you know that you will learn better in person.
Also, never follow a group or recipe that is teaching REBEL canning recipes. When you are following Facebook groups make sure they don't allow rebel practices to be talked about in the group. These are unsafe and can put your family in danger. Just because a jar seals does not mean that the contents are safe to consume.
Safety When Canning at Altitude
When you are canning, it is important that you pay attention to the altitude that you are at. If you are over 1000 feet in elevation, you need to make adjustments to include that. This article is a great reference for how to safely can at high altitudes, be sure to read it and make adjustments as needed.
What is Water Bath Canning?
Water bath canning is one type of canning. In water bath canning, you use any large pot that has a lid. To put it simply, filled jars are put in the pot and covered with water, the water is heated to a boil and remains at that temperature for a certain amount of time.
Water bath canning is safe for high acidity items such as jams, jellies, salsas, fruit, pickles, etc.
